Introducing: The NicGriddle

Breakfast is by far my favorite meal of the day. Breakfast foods are by far my favorite kinds of foods: eggs, bacon, fruit, sausage…you get the picture. My typical weekday breakfasts consist of eggs and fruit with the occasional breakfast meat (depending on how early I wake up and if I feel like getting bacon greased), but about once a week I want something different. That’s when I make the NicGriddle. It is so called because it is a breakfast sandwich between two almond flour pancakes, and because my last name is NIChols. It’s a healthy play on the McGriddle. Get it? Cool. I modified my original Monster Almond Meal Pancake recipe to make the cakes more like traditional pancakes and less like a dense almond mess.

Almond Meal Pancakes Revisited

Ingredients:

1/4 cup almond meal

1 egg

1Tbsp chia seeds

splash of vanilla extract

For my last NicGriddle, I spread some Justin’s Honey Almond Butter and slices of nectarine in the style of Julie from Peanut Butter Fingers.

Delicious and portable! I just hope that McDonald’s doesn’t get mad that I stole their name…

    This looks delicious – I was cringing at the thought of putting bacon on this sandwich too — thank goodness you left it on the side! Ha!

      HA! Yeah…that would be pretty weird…I mean, I like bacon, but probably not with nectarines…

    Breakfast is my favorite meal! I eat it at all times of the day…in fact i make an omelette or pancakes for dinner at least twice a week!

    Thanks for sharing this recipe. It is an excellent base recipe that lends itself beautifully to embellishments. I left out the coconut, added ground oats and almond milk, oh and a little maple syrup. Next time, I might add roasted quinoa flakes or a superblend of grains.
