Apples, Apples and Apples

oh, hello! Long time, no see…how have you been?

I’ve been busy. Busy with my day job and busy doing some behind the scenes action for my health counseling business. Being busy is both good and bad: I love having things to do and I love being productive, but working takes time away from what I consider my “real life” in which I do things for myself…like cook and bake and be happier in general.

M and I did get a chance to take a break over the long Columbus Day weekend. We drove up to Vermont to see my family. While there, we picked apples, ate muffins, golfed (M golfed…I did not), and relaxed.

We admired the foliage

We played with the pups (Yodel, Chester and Rocky!)

We picked a ton of apples..literally.

We baked pies…

It was so nice to take a break up in Vermont– we were a little sad to leave.

We did bring a little bit of Vermont home with us…in the form of one million apples. We went to the apple orchard down the street from my mother’s house and stocked up on apples, cider, jam and apple cider donuts (the best donuts on the planet). While visiting, my Mama made us apple coconut muffins, and apple crisp. She and I also baked three apple pies and M and I still took home about a half bushel of apples. More apple recipes to come!

I grew up in Northfield VT. I left when I was 18 for college, and have been in VA ever since. This post makes me MISS it!!!! There are soooo many unique and beautiful things about Vermont.

Apple picking rocks and I second the request for your Mom’s recipe!
