What could be better than a whole chicken, ready to eat, cooked to deliciousness by someone else?
I think the best part about the rotisserie chicken is that it’s a blank chicken canvas on which you can paint any side dish that you desire. Rotisserie chicken with broccoli, rotisserie chicken pesto pizza: the possibilities are seemingly endless.
Last night, M and I were wandering through Whole Foods looking for dinner. It was getting late and we didn’t feel like facing a large kitchen endeavor.
As we circled the salad bar, the little chickens caught my eye. We grabbed an herb roasted bird and some broccoli and hurried home to make the quickest dinner ever. Herb roasted chicken with steamed broccoli and garlic…yum!
The second best part about a rotisserie chicken is the price. For not-so-much money, we got enough food for a two person dinner and two lunches the next day. Is there anything better than a filling, healthy lunch that is super inexpensive? Rotisserie chicken with massaged kale salad–yum. It’s kind of like using Thanksgiving turkey leftovers…except that it’s chicken.
White meat, dark meat– you just can’t lose (I fell off my moped and I got a bruise). When you’re pressed for time, or you don’t feel like cooking, rotisserie chicken makes having a healthy meal very easy. I highly recommend them when in a pinch!
