Kalapplenana Smoothie

If you know me, then you know I love breakfast. It’s my favorite meal of the day. Not only do I like breakfast foods (I could eat them all day long…um, bacon?), I like eating in the morning. There’s really nothing like a healthy meal first thing in the day.

I usually stick to the eggs and breakfast meats–I like to eat a protein heavy b-fizzle because it helps me feel healthy, energized and ready to face my day with a more positive outlook. But sometimes I’m in the mood for something lighter and fruitier. January is a time when many people try “cleansing” diets or go crazy with the juice fasts. I’m not one for juice, as it’s usually pretty high in sugar, but I do enjoy a good smoothie every now and again.

This morning I was in the mood for something perfectly sweet and liquidy, so I made a smoothie with some apple, banana and kale. I call it the Kalapplenana Smoothie.

Kalapplenana Smoothie

Ingredients:

1/2 medium apple (I used a braeburn)

1/2 banana (frozen)

1 handful of curly kale

1 cup So Delicious Unsweetened Coconut Milk

1 Tbsp Chia seeds

Step One: Break your kale up into smaller pieces and place in a microwave safe dish with some water. Microwave on high until the leaves are a little wilty– steaming the kale helps release the nutrients, you know.

Step Two: Put everything in the blender. I like to put the chia seeds in the bottom and the milk in last…but you can do it in any order you want…alphabetically, by ripeness, or from favorite to least favorite ingredient.)

Step Three: Blend!

Step Four: DRINK!

I chose to use apple and banana in my smoothie not only because they were the only fruits in my house (it’s winter in New England…there’s very little in season here right now…), but because both contain pectin (apples more so than bananas). Pectin is a complex carbohydrate, or soluble fiber found mostly in plant cell walls, and is used in cooking as a thickening agent. This means that when ingested, pectin can help aid digestion and  to clean out or normalize the digestive tract.

Kale, as one of those dark green leafy vegetables, has a multitude of health benefits including anti-inflammatory properties and loads of vitamins K, A and C.

Well, this smoothie turned out okay…and only okay…I think it was missing something. A scoop of almond butter perhaps? Or some cocoa powder? Something. A smoothie is a great way to get some fruits and vegetables into your system in the morning (or anytime, really). They usually turn out pretty good!     I love the recipe for the Kalapplenana Smoothie. Now all I need to do is get the ingredients. I see that you have it in a Miller Lite glass and wonder if there’s a message there…

      HA! I think I chose that glass because I have football on the brain– hence the “Gridiron’s Greatest!” I’m anxious about this weekend’s game…GO PATS!

      That sounds yummy! And what a gorgeous shade of green! I use So Delicious coconut milk in my smoothies every morning, so I can’t wait to try this one!

    I made a smoothie very similar to this yesterday, apple, banana, kale and water. It was definitely missing something, so I added a splash of orange juice and it was just what it needed!
