A Taste of Summer: Coconut Blueberry Muffins

It’s cold here. Like, really cold. There is a ton of snow. Like, a literal ton of snow. We’ve shoveled and shoveled and there’s just no where left to put it. It’s only the beginning of February and there’s already a pile of snow in front of our house that reaches above the porch.

All of this snow has us longing for warm weather. For sun,  for outdoor BBQs, for tans, for vitamin D. There are some awesome fruits and vegetables in season in the New England summer.  Blueberries are my absolute favorite summer fruits, so I decided to get some frozen blueberry goodness and whip up some coconut blueberry muffins!

I made mini muffins using Sara’s recipe from Nourish and Flourish, but substituted coconut milk  for the water and  I sweetened them with honey.

Blueberry Coconut Muffins

Ingredients:

3 eggs

1/3 cup coconut flour

2 Tbsp butter

3 Tbsp unsweetened apple sauce

1/2 tsp vanilla

1/4 tsp sea salt

2 Tbsp honey

1/2 tsp baking powder

5 Tbsp Coconut Milk

1/2 cup blueberries

These muffins were great! The coconut flour wasn’t over powering: they actually tasted like conventional blueberry muffins! They went perfectly with my banana, peanut butter, coconut breakfast treat…
