A Valentine’s day approaches, I’ve been thinking about lovely things I can do for my love…specifically lovely things I can make for dinner.
M is my biggest cooking fan– he likes everything I make…or at least he says he does…His one complaint is that I usually don’t make the same meal twice. I’m so busy trying new recipes, that I sometimes forget about the awesome ones I’ve made in the past. So the other night I decided to go back to an old standby– Goat cheese and sun dried tomato stuffed chicken with a simple spinach salad. I got this idea from a chicken recipe I found on Mark’s Daily Apple about a year ago–it’s easy, quick and quite delicious! This recipe is definitely one of our favorites!
Goat Cheese and Sundred Tomato Stuffed Chicken

2 chicken breasts
4 oz goat cheese
~1/4 cup sundried tomatoes
1 clove garlic
