Valentine’s Tasty Treats!

I have consumed WAY too much chocolate in the past two days.

Kidding! I know there’s no such thing as “too much chocolate!” However, in order to keep my insulin, waistline and sanity in check, I decided to make some chocolate-free Tasty Treats to eat on Valentine’s Day…um…Today!             dscn3079

Tasty Treats are basically homemade Larabars— I just choose the nuts, seeds and dried fruit I want to use, pop the ingredients into the food processor and then roll them into cute, little balls. In the past I’ve used dates, dried mango, almonds, cashews…pretty much every nut you can imagine. For Valentine’s Tasty Treats, I decided to use a new, excitingly lovely combination of nuts and fruit!

Valentine’s Tasty Treats

Ingredients:

1/2 cup dried Apricots (I used a fancy brownish kind)

1/2 cup pecans

1/2 cup unsweetened coconut flakes

1/4 cup sunflower seeds

1/4 cup pumpkin seeds

1 Tbsp Coconut oil

1 Tbsp almond meal

1 tsp cinnamon

Shredded coconut for sanding

dscn3063 First, soak the dried fruit in a little water– this helps the fruit turn into a nice, sticky paste in the food processor.

dscn3067 Not-so-dried fancy apricots.

dscn3064 Next, pile your coconut, seeds and nuts into the food processor,

dscn3065 and chop/grind them until they are fine and well blended.

dscn3068 Then, blend the soaked, dried fruit.

dscn3069 Next, mix the fruit paste and the nut/seed/coconut blend together in a small bowl. Add the coconut oil, almond meal and cinnamon and mix everything together.

dscn3070 Scoop and roll the mixture into balls,

dscn3072 and let them chill out in the fridge for about 30 minutes to firm up.

dscn3073 Once they are firm, you can decorate them as desired! I rolled mind in some shredded coconut, but you could easily dip them in chocolate or drizzle them with something delicious.

    Mmmm these look absolutely divine! In fact I think I may just pop into the kitchen to make them… Great recipe, I’ve been looking for a snack recipe with not too much sugar and plenty of nuts/seeds, and this one is perfect!
    I love things spicy so I might add some nutmeg too. Thannks.

      Thanks! These are definitely not too sweet! The best thing about them (in my opinion ) is that you can basically make them with any fruits/nuts or seeds that you like! Let me know how they turn out!

    I just made some pumpkin ones. I used pecans, almonds, dates, coconut, pureed pumpkin, pumpkin pie spice, then rolled some of the balls in finely chopped pecans, some in shredded coconut, and some in a light dusting of pumpkin pie spice. My book club will be happy tonight if they last that long.
