I have consumed WAY too much chocolate in the past two days.
Kidding! I know there’s no such thing as “too much chocolate!” However, in order to keep my insulin, waistline and sanity in check, I decided to make some chocolate-free Tasty Treats to eat on Valentine’s Day…um…Today!
Tasty Treats are basically homemade Larabars— I just choose the nuts, seeds and dried fruit I want to use, pop the ingredients into the food processor and then roll them into cute, little balls. In the past I’ve used dates, dried mango, almonds, cashews…pretty much every nut you can imagine. For Valentine’s Tasty Treats, I decided to use a new, excitingly lovely combination of nuts and fruit!
Valentine’s Tasty Treats
1/2 cup dried Apricots (I used a fancy brownish kind)
1/2 cup pecans
1/2 cup unsweetened coconut flakes
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1 Tbsp Coconut oil
1 Tbsp almond meal
1 tsp cinnamon
Shredded coconut for sanding
