Straight Up Coconut

Coconut has emerged as my new food obsession. A few weeks ago I splurged on a jar of Artisana Coconut Butter.

Theoretically, I planned to take my time and make this jar last forever. In actuality, I ate the coconut butter directly from the jar…in a week and a half. Yep. True story.

While this stuff is insanely good, it is also fairly expensive. I was planning to give it up in favor of keeping some extra dollars in my wallet, when I saw that Melicious had posted a recipe for homemade coconut butter.

I had attempted to make coconut butter before, but the motor in my tiny food processor threatened to explode. However, my body was hankering for some fat yesterday, so I took my little food processor aside, and told him I would be forever grateful if he allowed me to run his tiny motor for 10 minutes. He reluctantly acquiesced.

I poured some unsweetened, shredded coconut and melted coconut oil into the food processor and processed with abandon. About 10 minutes later, I had delicious, homemade coconut butter! AND my fp was still living!

I transferred the butter to an empty jar (after eating more than a few spoonfuls directly out of the food processor…)


In addition to being delicious, coconut also has a myriad of health benefits including:

  • Improving digestion and bowel function
  • Improving insulin secretion and utilization of blood glucose.
  • Anti microbial, anti fungal and anti viral properties
  • Increasing energy and improving athletic performance
  • SO much more!

    Yay! Glad you tried the homemade coconut butter. I’ve put a ban on it in my house until at least May 1 because I was doing that “I’ll just have one little spoonful” thing… like, 5 times a day! 😉

    HA! That’s exactly what I was doing…and I will probably continue to do it until this jar is empty…dangerous stuff that coconut butter.

    Hi Allison! Found your blog from a comment you left on Carrots n Cake. =)

    I have a jar of Artisana coconut butter sitting in my pantry, and the only way I seem to enjoy it is mixed with cocoa powder and a little stevia. Otherwise, it tastes so weird to me — almost makes my mouth too dry. Bummer, because I love coconut otherwise! =)

      I know what you mean about the coconut butter drying out your mouth…I usually heat mine in the microwave for 30 seconds to make it a little more liquidy– I also like to mix it with almond butter for drizzling on apples!
