Coconut has emerged as my new food obsession. A few weeks ago I splurged on a jar of Artisana Coconut Butter.
Theoretically, I planned to take my time and make this jar last forever. In actuality, I ate the coconut butter directly from the jar…in a week and a half. Yep. True story.
While this stuff is insanely good, it is also fairly expensive. I was planning to give it up in favor of keeping some extra dollars in my wallet, when I saw that Melicious had posted a recipe for homemade coconut butter.
I had attempted to make coconut butter before, but the motor in my tiny food processor threatened to explode. However, my body was hankering for some fat yesterday, so I took my little food processor aside, and told him I would be forever grateful if he allowed me to run his tiny motor for 10 minutes. He reluctantly acquiesced.
I poured some unsweetened, shredded coconut and melted coconut oil into the food processor and processed with abandon. About 10 minutes later, I had delicious, homemade coconut butter! AND my fp was still living!
