Sunny Strawberry Bananza!

The sun has finally appeared in Boston! It’s crazy how much of a difference a sunny day makes. I feel like I’m happier and even more productive on sunny days than on cloudy, dreary days. Something about that blue sky just makes me smile!

In a tribute to the sun, I decided to have a delicious smoothie for breakfast. Strawberry Bananza Smoothie

Ingredients:

2 cups raw spinach

1 1/4 cup Unsweetened So-Delicious Coconut Milk Beverage

1 Tbsp almond butter

1Tbsp chia seeds

a generous sprinkle of shredded coconut

1/2 frozen banana

1/2 cup frozen strawberries

This was my first time using a frozen banana. I loved it! The smoothie was so much creemeeier (did you know that in Vermont, soft serve is called Creemee? My non-Vermonter friends always laugh at me when I call soft serve by it’s true and rightful name.)

This cold, delicious, fruity, vegetably breakfast was a great start to my Memorial Day weekend.
