For the next two weeks I’ll be eating lots of leafy greens and animal protein, while avoiding those inflammatory grains, legumes and dairy.
I went to the farmer’s market last week and stocked up on leafy greens–collard greens, kale and romaine lettuce for starters.
Personally, I think that collard greens are one of the prettiest things found in nature.
I was inspired by their leafy greenness, so I decided to use them as the wrap for my lunch. Instead of having my chicken over salad, I wrapped my chicken in salad.
Is it just me, or does Chester look like Disaster Girl in this picture?
Anything you would put between two slices of bread would taste infinitely more delicious when wrapped in leaves.
This is a Paleo friendly sandwich if I ever saw one!
