I’ve been cooking up a storm this week and it feels good! One of my goals for the Return to Nourishment Cleanse was to make more meals at home. These past few months were super busy and I didn’t cook at home as much as I would have liked.
I’m totally making up for that now!
Anyhoo. M liked the Paleo Stuffed Peppers I made a while back. He reeeeally liked them….like he requested that I make them again for the cleanse.
So I did.
With a few changes.
Paleo Stuffed Peppers Reloaded
2 Red bell peppers
1/2 lb ground turkey
2 cloves of garlic, pressed
1/3 cup fresh basil
2 cups curly kale
a dash of parsley
These little green guys are from my tiny garden.
Place the peppers in a glass baking dish and bake at 400 F for 40 minutes.
