Angry Bird or “The Night of the Big-Girl-Tantrum”

Last night I made a special dinner.

Another whole chicken.

I don’t know why I continue to cook whole chickens. They make me angry.

They’re never done cooking when I want them to be.

Last night, I attempted to make a slow cooker recipe that my mother gave me.

Angry Bird or Simple Slow Cooked Chicken

Ingredients:

1 whole chicken about 4lbs

3 sprig of fresh rosemary

3 cloves of garlic

Directions: Stuff the rosemary and garlic into the chicken and plop in the slow cooker. Cook on low for 6 to 7 hours depending on your slow cooker wattage…

I may or may not have thrown a grown-up-lady-tantrum last night: I pulled the chicken out of the slow cooker after 6 hours (6 HOURS!) and it was still pinky and chicken-juicy.

I might have not taken into account the fact that our slow cooker is different from my mother’s…or that the chicken was bigger…whatever, directions. Who really follows those anyway? Certainly not me.

My slow cooker is a little weak I guess, because after flipping 6hrs on low, we still had to put it in the oven at 425 for 15 minutes. Better safe than sorry when it comes to chicken though…

I also made some Dinosaur Kale:

Is it called Dinosaur Kale because it looks like a dinosaur? Or because it looks like something a dinosaur would eat?

I de-stemed the kale and sautéed in a pan with some bacon grease, sea salt and fresh garlic.

We enjoyed our chicken and kale with a side of sweet potato.

It all worked out in the end (the chicken was delicious and totally worth it), but I must say there was an unusual amount of foot-stomping…Even though this was a frustrating dish–mostly because I’m an inexperienced meat cooker–it was more than worth it. We had an amazing meal and we still have amazing leftovers.
