What Will 2012 Bring for You?

Happy New Year everyone!!

I always get excited to set goals this time of year (as I’m sure many of you do as well), because for some reason, I always feel like I have more motivation to stick with things with the fresh beginning of the new year.  At least stick with things longer than I usually do…

What will 2012 bring for you?

I have a few goals for this year that I’m puttin’ on my vision board, which I will unveil on the blog when I feel it’s complete…so probably tomorrow or something.

One of my big goals is to cook more. For reals.

I have to admit that there are weeks where we’re so busy that we order a lot of takeout.

Luckily, I know how to make healthy choices at restaurants, so I’m usually eating healthy food— this goal is more for my wallet than my waistline.

I need get better at keeping an efficient kitchen. Well Fed is helping me with this, but it’s all about finding a home-cooking groove and keeping it going.

Anyway. I started reaching for this goal early this year by cooking some delicious Paleo food for a New Years Eve pot luck!

I made Velvety Butternut Squash.

One of my new favorite recipes from Well Fed.

The texture of this squash is amazing. I probably could have eaten the whole dish, but I was nice and saved some for my friends.

I also made Chicken Satay from Make it Paleo.

Also a delicious dish. I even made the “peanut” sauce to go with it. I say “peanut” because it was really sunflower seeds. Although for some reason, I kept telling everyone I used sesame seeds. Same thing, right?

I’m well on my way toward keeping this “cook more” resolution. This week I’m going to fine tune my plan to keep my kitchen running like a Paleo machine!

    Allison- I am with you with the more home cooking idea. I don’t eat out much but I DO pick up prepared foods at the Health Food store regularly- and that is hard on the pocket book as well! Thanks to you I am becoming accustomed to adapting favorite foods to make them more healthy i.e. substituting ingredients and not using processed foods. I made meatloaf in my slow cooker and used sugar free ketchup instead of my usual… also using maple syrup to sweeten.

      Your welcome and thank YOU, Carike! It’s really good to hear that you’re adapting your foods to be more healthy! That can take a lot of adjustment–great job! I LOVE using maple syrup to sweeten foods…and I’m making turkey meatloaf tonight!!
