{Super Bowl Recipe Re-Post} Bacon-y Scallops for Sophisticated Palates

Superbowl XLVI is coming…it’s getting closer everyday…

Get ready for another installment of {Superbowl Recipe Re-Post}

Today’s recipe is for the sophisticated football fan:

Bacon Wrapped Scallops

(originally posted during the beautiful summer month of July)

Ingredients:

1 lb bacon

1 lb scallops

sea salt and pepper

I first posted the recipe after a summer vacation in Martha’s Vineyard…these pictures make me wish summer would come sooner!

I’ve revised the recipe a little to make it simpler.

Just cut the bacon strips in half, and wrap each scallop. Season with a little salt and pepper and secure with a toothpick. Place on an aluminum lined baking sheet.

Bake at 400 F for 20 minutes, then flip and bake for another 20 minutes–until the bacon is crispy and the scallops are opaque.

Place your scallops on a plate by the ocean…er…television and enjoy this delicious combo whilst watching Gronk, Deon, Brady and Wes.
