So the Patriots lost. I’m pretty darn sad.
The game was rigged…or something.
Anyway. Even though the Pats lost, I enjoyed the game (for the most part), the company and the food at the Super Bowl party M and I attended.
I made two delicious dishes to share with my friends, the first of which I’m sharing with YOU right now!
Bacon Wrapped Dates Stuffed with the Cheese of a Goat
1 lb bacon (uncured, nitrate, nitrite free)
~36 dates, pitted
2 oz goat cheese (about 1/2 a package)
I’ve wrapped many-a-thing in bacon before, but never dates. This recipe had been floating around my head for a while. I probably saw it on the internet somewhere…it’s not like it’s a super original recipe.
The first thing I did was cut the bacon in half– the dates were pretty small, so 1/2 a strip of bacon was plenty to cover them completely.
I sliced each date in half lengthwise and filled with goat cheese,
then wrapped the dates in bacon and placed on a rimmed baking sheet lined with parchment paper.
I baked them for 30 minutes at 350 F — until the bacon was crispy.
These were so good that I forgot to take a picture of them on a plate. They basically went from the pan into people’s mouths.
The dates were a little sweet for my tastes (I might be crazy, I know.). I’m wondering what this recipe would taste like with figs…or if it would work with another dried fruit…
