Sweet Potato Home Fries

Last weekend M and I went to Lil’Nic’s (my little sister) house for brunch.

We all  love brunch.

It’s our favorite restaurant meal.

Who doesn’t love a meal where you can eat eggs, bacon, sausage, fruit AND salad if you want?

There were a lot of really delicious Paleo foods featured at our Sunday Brunch.

Including…

Poached Eggs…

Cinnamon baked apples with pecans from Paleo Comfort Foods (Lil’Nic made these…)

Morning Glory Muffins…

Strawberries, bacon and…

Sweet Potato Home Fries

Ingredients:

2 large sweet potatoes, cut into small cubes

1 onion, chopped

sea salt

pepper

garlic powder

paprika

Coconut oil or bacon grease for the pan

Directions are simple:

  1. In a large frying pan or skillet  greased with coconut oil or bacon grease, cook the sweet potatoes until they start to soften.
  2. Add your onion and seasonings and cook until sweet potatoes are soft and onion is translucent (about 20 minutes).
  3. That’s it! Super easy…
