New Favorite Food Combo: Local Pork Sausage, Dino Kale, Onions and Sweet Potato

I’ve discovered my new favorite dinner.

It’s quick.

It’s easy.

It contains green veggies…

and the combination of flavors made me wacko. In that it was so awesome, I could have eaten five plates full…

Local, organic pork sausage of the spicy Italian variety, over dinosaur kale sautéed with red onion and half a sweet potato on the side.  This dish was a play on the traditional sausage, peppers and onions. The kale added some more substance (and I didn’t have any peppers).

I cooked the onions in bacon fat until they were translucent and then added the kale, seasoned with garlic powder, and red pepper flakes and cooked until the kale was wilted.

I baked the sausages at 400 F for 30 minutes, flipping them half way through.

SO easy. SO delicious…this might become a weekly staple. Just saying.
