Easy Sweet Potato Broccoli Curry

I’m all about easy meals.

This one was not only easy, it was SUPER easy.

I got this idea from Melissa Joulwan’s Well Fed Hot Plates…have you read Well Fed? WHAT? You HAVEN’T?! GET ON IT…like…NOW!!

Sweet Potato Broccoli Curry with Chicken

Ingredients:

1/2 sweet potato

2 cups broccoli

2 chicken (boneless, skinless breasts)

1/4 cup coconut milk

2 tsp curry

a generous sprinkle of red pepper flakes

coconut oil for the pan

This is the perfect recipe for leftover chicken. I like to sprinkle my Weekly Cookup chicken with sea salt, garlic powder, cumin and a little turmeric and bake at 350 F for 20 minutes.

Once you have your cooked chicken, follow these easy steps:

  1. Pop your sweet potato in the microwave– or if you have time, bake it in the oven at 425 for 40 minutes or until easily pierced with a fork.
  2. In a large skillet, melt some coconut oil. Saute the broccoli until tender.
  3. Once your sweet potato is cooked, chop it into cubes and add to the broccoli.
  4. Slice your chicken into strips and add to the pot.
  5. Pour the coconut milk over the protein and veggies, add your curry and red pepper flakes and stir.
  6. Serve it up…you’re done!

I love the consistency of this meal– I could eat it for ever! This was my first time adding sweet potato and I LOVE it…

Ingredients

Instructions
  1. Pop your sweet potato in the microwave-- or if you have time, bake it in the oven at 425 for 40 minutes or until easily pierced with a fork. (I usually used leftover chicken for this recipe, but if you're making it fresh, bake your chicken at 350 for about 20 minutes or until the juices run clear and the inside temp is 165 F)
  2. In a large skillet, melt some coconut oil. Saute the broccoli until tender.
  3. Once your sweet potato is cooked, chop it into cubes and add to the broccoli.
  4. Slice your chicken into strips and add to the pot.
  5. Pour the coconut milk over the protein and veggies, add your curry and red pepper flakes and stir.
  6. Serve it up...you're done!
