Pesto Beef Burgers Stuffed with Mozzarella

We eat a lot of burgers at my house.

A lot.

Instead of doing our usual “burger mess” last week, I decided to combine two of my favorite things, beef and pesto, and make delicious pesto beef burgers…with a surprise inside!

Pesto Beef Burgers

Ingredients:

1 lb ground beef (preferably grass fed)

3 Tbsp basil pesto

4 Tbsp shredded mozzarella cheese

black pepper

Directions

  1. In a large bowl, combine beef and pesto. Get in there and squish it around with your hands until it’s well combined. Add a little pepper if you feel like it.
  2. Separate the beef into four 1/4lb burgers. Roll the beef into a ball and flatten it out on a plate or clean surface. Place 1 Tbsp of cheese into the center of the burger, and fold up the sides. Press the edges together firmly and flatten out the burger so that it will grill up nice.
  3. Grill ’em up and enjoy!

I might have used a teensy bit more than 1 Tbsp of cheese…

We ate ours with a side salad of mixed greens, cucumbers, baby carrots and maple pecans.

I put some tomato sauce on top of mine…it was glorious.

      Hi Veronica! Yes, in the “strict paleo” world– aka if you’re trying to clear up digestion and inflammation issues–it’s best to stay away from dairy for a while–probably at least 30 days to get an idea of how it affects you.

      Personally, I’ve done this experimentation and found that I can tolerate some full fat, often raw, dairy every now and again. It’s not a staple in my diet– I think of it more as a condiment. It all boils down to how it affects you– how you feel after eating it: how your digestion is, how your skin looks etc.

      Because of my asthma, I tend tend to stay away from most dairy, with the exception of some cheese every now and again.

      If you’re still in those beginning phases on clearing up some inflammation or digestion problems, you could always stuff your burgers with more pesto, or sun dried tomatoes, or marinated artichokes or something.
