“Food Gifts are the Best Gifts” or “The Beauty of Farm Fresh Eggs”

My mother came to visit last week.

She brought me food gifts.

Which, if you didn’t know, are the best kinds of gifts.

Farm fresh eggs.

Bacon ends and pieces.

Lettuce and mint from her garden.

Like I said: the best kinds of gifts.

One dozen eggs.

Laid in Vermont.

On Cackleberry Plantation. Does it get any better? Well, yes.

Some of my eggs were green.

How cool is that?!

I fried some up for breakfast. Eggs on top of mom’s lettuce, with raw sauerkraut, strawberries from my local farmer’s market and some banana bread with pastured butter on top. Yes, I sometimes eat my food on top of my books. (P.s. It Starts with Food is so good! More on this tomorrow)

The most beautiful yolks I’ve ever seen!

So orange-y and delicious.

I’ve discovered that fresh eggs are one of my favorite foods.

I’m thinking I’ll make a point to get some whenever the opportunity presents itself.  To me, fresh inherently means “more nutritious.” The fresher the better when it comes to eggs, meat…veggies…everything! That’s why I like farmer’s markets so much.

Do you eat farm fresh eggs when you can? Duck eggs are next on my list…I hear they’re Ah-mahzing.

I’m lucky to live in a town in western Colorado where many people raise chickens and ducks and sell their eggs at very reasonable prices. We eat the chicken eggs every day and I bake my coconut flour based treats with the very large duck eggs. Can you say super-yummy!! Duck eggs are amazing and in addition to the things I bake, we sometimes eat them just like we do the chicken eggs.

Oh man am I jealous! Being in the city, I kind of depend on the weekly farmer’s market to get fresh stuff like that. Now I’m even more excited to seek out some duck eggs 😉 Thank you!

I can’t wait to hear how you like those delightful duck eggs! Sometimes we get a few super large ones and hubby and I can share one scrambled egg and be quite satisfied!
