Super Special Birthday Carrot Cake

Over the weekend, we journeyed up to Vermont for my Mother’s birthday.

My Mama loves carrot cake, so I thought I’d make her a grain-free, naturally sweetened version from the Food Lover’s Kitchen.

It was a very special birthday, so it deserved a very special cake.

This was the first time I’ve made a cake for a special occasion where something hasn’t gone horribly wrong.

Ice cream cake for M’s birthday, melted brownie-ice cream blob.

Red velvet cake for our Halloween party– too dry. Sahara cake.

You get the idea.

This cake was perfect.

I used this recipe from the Food Lovers’ Kitchen.

The perfect blend of coconut flour, maple syrup, dates and carrots.

The cream cheese frosting was re-donculous.

I wish I’d made a double batch and eaten some on a spoon.

Chester wanted some, but puppies don’t eat cake.

I had mine with some chocolate and vanilla coconut milk ice cream. Yum.

Everyone at the party said it was the best carrot cake they’ve ever had…not too shabby for a grain-free cake!

Good ’til the last bite.

Will have to give this a try! My hubby loves carrot cake and we’ve recently discovered our family needs to be grain free. Perfect timing! 😉
