{Friday Musings} A Creative Use of Leftovers or Paleo Egg Wraps: A Most Portable Breakfast

I had a lot of tortillas left over after our night of fish tacos, so I decided that instead of freezing them for another day, I would try to re-purpose them.

I don’t mean “re-purpose” them as coasters, Frisbees, or wash clothes– I mean transition them away from fish tacos and toward breakfast.

The players: coconut flour tortilla and two eggs fried in butter with blueberries and banana. This was my second most creative meal this week.

 Paleo-On-The-Go breakfasts are tough. I mean, you could do hard boiled eggs, or dinner leftovers in a storage container, but personally, I’m always tempted by the flat breads at Dunkin’s. Not so much by the flat bread egg white sandwiches themselves, but by the idea of having hot eggs in a wrap that you can take with you…a hot, portable, breakfast sandwich.

I may have just solved that problem for you…

You still have to make it as opposed to ordering it over the counter, but isn’t the care in the effort?

    I like making PB&J or PB&banana wraps. And sometimes just a Kind bar!

      oOOooo…PB and banana wraps sound awesome! I think I’m going to make some non-spiced tortillas next and then I’ll definitely try that one…maybe some chocolate hazelnut butter with banana…yum!
