Crispy Rosemary Chicken Thighs

Yay! Today is day one of the Fall Nutritional Reset!

I’m pretty darn psyched.

Here is a delicious recipe that I promise you I’ll be making again soon.

Chicken thighs are delicious. If you’re still stuck on chicken breast meat, come over to the dark-side immediately.

Crispy Rosemary Chicken Thighs

Ingredients:

4 to 6  bone-in, skin-on chicken thighs (the skin is the best part!)

3 cloves of garlic, minced

1/2 cup pastured butter

1/2 tsp sea salt

1/2 tsp fresh rosemary, minced

Directions:

  1. Preheat the oven to 425.
  2. Using your finger, create a little pocket between the chicken meat and the skin. Fill this pocket with minced garlic (spread evenly between each chicken thigh).
  3. Melt the butter and add the minced rosemary and sea salt. Stir until well combined.
  4. Brush each chicken thigh with the butter mixture and place in a roasting pan.
  5. Cook for 45 minutes, or until a meat thermometer reads 165 F

Serve with some veggies. Preferably topped with delicious butter.

This recipe is so easy. SO easy. And so delicious. I’m all about recipes with super quick preparation and delicious results. It makes life so much easier.

    Yum! I make a similar dish all the time, and I usually finish it with a squeeze of lemon juice. So awesome that it’s such a quick and easy recipe!

    Made this for dinner, it was delicious. The skin was so crispy mmm. We are doing Whole30 so I used melted Ghee instead of butter.
