Hurricanes call for Pumpkin Pancakes

It was a hurricane out there. Sandy to be exact.

Yesterday, I was sequestered inside my house…which is not so different from other days…

When it’s gray and windy outside, I like to hole up inside with warm, comforting foods.

In this case, one of those foods were pumpkin pancakes.

I used the recipe from Practical Paleo, which can also be found on the Balanced Bites website. I lurve this recipe because there’s no flour in it! NONE! Just eggs, pumpkin, spices and some optional maple syrup. I topped mine with some grass-fed butter and cinnamon like the recipes suggested. No need for syrup on top. They. Were. Amazing.

As there is no flour in these pancakes, I consider them a vegetable.

The most delicious vegetable I’ve had in a looooong time 😉

To me, pancakes are a sometimes treats for special occasions. I usually just stick with eggs and veggies for breakfast.

This morning, however, I needed something warm and comforting. These pancakes helped me satisfy that craving while still sticking with my Nutritional Reset (which ends today, by the way).

    I have been eating sweet potato pancakes with one egg white, coconut flour, cinnamon, flax, and vanilla. Love it!

    would you consider these pancakes a treat or something thats ok to eat a few times a week?

      That’s a good question, Crystal. Because this recipe doesn’t have any kind of flour in it (almond or coconut), I think I would eat these maybe once a week– IF I had the time to make them. If I ate them more regularly, I wouldn’t do maple syrup every time, just because of the sugar, but I would do the grass-fed butter and some fresh fruit on them or something!
