A month or so ago, on my way home from Vermont, I got hungry.
I hadn’t packed my own snacks, so I had to stop at a gas station and scrounge around for something that I wanted to eat.
I usually don’t buy trail mix, but this one caught my eye.
California Medley, it read.
Pistachios, Almonds, craisins and raisins.
Sounded good to me.
While I was munching on my California Medley, I couldn’t help but think how much better it would taste surrounded by fudge.
So I created some California Medley Fudge.
California Medley Fudge (Grain-free, Dairy-free, Naturally Sweetened)

The base for this fudge is from Coconut Mama's Coconut Cream Fudge Recipe.

Ingredients
- 1½ cups coconut butter
- ½ cup cocoa powder
- 1 Tbsp vanilla extract
- ½ cup Grade B Maple Syrup
- ¼ tsp sea salt
- ¼ cup tart cherries
- ¼ cup pistachios
- ¼ cup raisins
- ¼ cup pecans
Instructions
- In a medium sauce pan over medium heat, melt the coconut butter, cocoa, vanilla and maple syrup.
- Stir in the tart cherries, raisins, nuts and sea salt.
- Spread the fudge into a greased glass baking dish and refrigerate for about 4 hours, or until firm.
I love the combination of sweet, salty and tart in this fudge.
It makes it kind of addicting.
Well, not “kind of”…definitely addicting.
Cold fudge for a hot day.
