Paleo (Frisky) Lemon Bars

Because every time I see the word “lemon” I feel the need to put “frisky” in front of it.

Every time.

Anyway. If you didn’t know, I’m a huge fan of lemons.

Both the fruit and the “life hands you lemons”  lemons.

Lemon bars have always been a favorite dessert of mine– the dessert most picked out of the pastry case.

Even over Chocolate Chip Cookies. *gasp*

(but we all know that homemade chocolate chip cookies taste millions of times better than store-bought cookies…so that shouldn’t really surprise you that much.)

The reason I usually bought lemon bars is because I always found them too time consuming to make myself. There was all of that squeezing and zesting and cooking-over-low-heat-ing and cooling. Too many steps for me who just likes to put all of the ingredients in a bowl and stir.

BUT then I found this recipe by Danielle at Against All Grain.

Minimal steps. Not that much waiting.

So I decided to try it.

I’m so glad that I did!

Lemonbars Okay, so they’re not really “Frisky” Lemon Bars– they’re “Against All Grain” Lemon Bars, but I just couldn’t help myself.

IMG_5240 I did use almond flour instead of sunflower seeds…

IMG_5227 These were the perfect blend of tart and sweet.

IMG_5230 Meaning: super tart and just sweet enough to keep me from making that sour face.

IMG_5238 BUT I love tart desserts.

IMG_5233 The crust was a little crumbly, but it didn’t matter too much.

IMG_5240 All in all these tasted just like the lemon bars I used to spend money on in pastry shops.

    Yep, you are amusing :).

    I’ll have to make these for my son. He’s a 17 year old in a health food nut, grain free household. Not common for most teenagers. Thankfully, he’s a real foodie and likes what I cook. But we don’t have food in our house like a “normal” family has: no Little Debbie, Top Ramen and Doritos! He will love these. Thanks!
