Paleo Pumpkin Pie Fudge

Okay. So I might have a problem.

Pumpkin Pie Fudge (Raw, Paleo, Vegan)

Adapted from The Purely Twins Healthy Pumpkin Pie Fudge
  • I cup pumpkin (canned or fresh)
  • 3 Tbsp Grade B maple syrup
  • ½ cup coconut manna (or butter)
  • 2 tsp pumpkin pie spice
  • ¼ tsp sea salt
  • Enjoy Life Chocolate Chips
  1. Combine all of the ingredients in a blender or food processor (it's easiest if the coconut manna is softened).
  2. Spread the fudge evenly into a glass baking dish lined with parchment paper.
  3. Sprinkle chocolate chips on top and press into the fudge.
  4. Chill in the fridge for 4 hours or until the fudge is firm.
  5. Cut up and enjoy!

    I made this with coconut oil and cocoa powder (instead of chocolate chips). It was yummy, toddler-approved, and did not last long. Question: are chocolate chips considered Paleo? Seems like something with added sugar isn’t Paleo, but I don’t know.

      Awesome! Cocoa powder is such a good idea. Yes, chocolate chips aren’t technically Paleo…but the ones I use are pretty dark chocolate, Enjoy Life chocolate chips, which are soy, dairy and gluten-free.

    I used fresh pumpkin puree and after refrigerating for over 4 hours I was not able to achieve the dense/firmness that appears in the picture. Mine is more like a solid mush. Taste good but I think canned pumpkin would work better.
