Raw Chocolate Pecan Biscotti

I first posted this recipe in December of 2010 (did you know that this blog existed back then? Yeah…I’ve been around).  I brought these raw pecan biscotti up to Vermont to share with my family in the beginning stages of my Paleo adventures. They are seriously delicious. Not too sweet, but chewy, chocolaty and SO so good.

Continuing with No-Bake Monday, I decided to make some Raw Chocolate Biscotti a la the girls at Pure2Raw. I actually got the recipe from a guest post at Fitnessista. I’m really digging the no-bake cookies right now.

Raw Chocolate Pecan Biscotti

Ingredients
  • 2 cups pecans
  • ½ cup coconut flakes or shredded coconut
  • 1 cup cocoa
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 tbsp coconut oil
  • 3 tbsp maple syrup
Instructions
  1. Combine the pecans, cocoa, salt, cinnamon and coconut in the food processor and chop into fine crumbs.
  2. Then add the vanilla, coconut oil and maple syrup.
  3. Mix until doughy.
  4. Spread the dough on a baking sheet lined with parchment paper, and form into a log.
  5. Cut into the desired size cookies and refrigerate for at least 30 minutes before serving!

I dipped mine in dark chocolate and more chopped pecans!

Perfectly sweet and nutty! I really like that they are sweetened with maple syrup too. I haven’t made anything with cocoa in a long time– these were SO easy!

    Thank you. I just made these with a fussy 9-week-old on my shoulder, and they were ready in about 2 minutes flat. They are chocolatey the max and not sweet–just like I like. Made my day.

      Yay! Yeah– they’re really chocolaty. and not sweet…but totally delicious. You only need a little bit to satisfy that chocolate craving.
