Paleo Stuffed Peppers

Serves: 2 to 4
  • Ingredients:
  • 2 green Bell peppers
  • 1 lb Italian sausage
  • 3 cups fresh spinach
  • 1 medium onion
  • 1 egg
  • Salt, pepper and garlic powder
  1. Preheat the oven to 400F
  2. Chop and saute the onions in a little bit of olive oil until browned
  3. Remove the sausage from its casing and throw in a large bowl along with spinach, egg, garlic powder, salt and pepper.
  4. Once the onions cool, add them to the bowl and mix--using your hands works best for this step...just make sure the onions are cool enough...or you'll burn yourself.
  5. Half and de-seed your green peppers. Place them in a glass baking dish.
  6. Fill each pepper with the sausage mixture.
  7. Bake at 400F for 40 minutes
