{Valentine's Day Treat} Paleo Bourbon Pecan Truffles

  • 5oz (half a bag) of dark chocolate chips
  • 2 Tbsp coconut oil
  • ½ cup full fat coconut milk
  • ½ tsp vanilla extract
  • 2 Tbsp bourbon
  • ½ cup pecans, finely chopped
  1. Combine the dark chocolate, coconut oil, bourbon and vanilla in a small bowl.
  2. In a small saucepan, heat the coconut milk until simmering.
  3. Pour the coconut milk over the chocolate and stir gently until everything is melted.
  4. Transfer the bowl to the fridge to cool for 5 to 6 hours or overnight
  5. After the chocolate mix has hardened, scoop out 1 Tbsp of chocolate, roll into a ball and roll in finely chopped pecans.
