Paleo Pumpkin Whoopie Pies

Cookie recipe adapted from Deliciously Organic . Frosting recipe adapted from The Food Lovers Primal Palate.
Serves: 10
  • For the Cookies:
  • 1 cup almond flour
  • 3 Tbsp coconut flour
  • 2 tsp cinnamon (or 2 tsp pumpkin pie spice--I didn't have any)
  • 1 tsp baking powder
  • 1½ tsp baking soda
  • ¼ tsp sea salt
  • 2 eggs
  • 1 cup pumpkin
  • ¼ cup raw honey
  • 1 Tbsp vanilla
  • For the Frosting:
  • 8oz full fat cream cheese
  • 2 tsp cinnamon
  • ¼ cup raw honey
  • 2 tsp vanilla
  1. Preheat the oven to 350 F
  2. In a large bowl, whisk the eggs, pumpkin, vanilla and honey together until smooth.
  3. In a small bowl, whisk together the almond flour, coconut flour, baking soda, baking powder, sea salt and spices.
  4. Gradually add the dry ingredients to the wet, mixing throughout.
  5. Line a baking sheet with parchment paper.
  6. Scoop out about 2 Tbsp of batter and roll into a ball.
  7. Here's the "whoopie" part: fling the ball of batter onto the baking sheet so that it splats. Yell WHOOPIE.
  8. Bake the cookies for 12 to 15 minutes or until they are springy and slightly browned.
  9. Allow them to cool completely on a wire rack.
  10. While the cookies are cooling, mix the room temperature cream cheese, cinnamon, honey and vanilla together with a hand mixer.
  11. Once the cookies have cooled, sandwich some frosting between two cookies and you have yourself a whoopie pie!
